MIMOLE Mole Negro De Oaxaca


Making mole from scratch is traditionally a large-batch, multi day project — something most of us don’t have time to regularly tackle. Enter MiMole, who has helped bring these vibrant and traditional Mexican cuisines to our kitchen, without the hassle or mess. 

MiMole is based in the valley of Oaxaca, a place whose cuisine has been recognized as an Intangible Cultural Heritage by UNESCO. Their recipes were inherited three generations ago, and are authentic - produced in small batches using traditional methods (roasting chiles & milling in volcanic stone mills) and using quality ingredients sourced locally in a sustainable manner. The Oaxacan black mole, born within the Zapotec indigenous culture, is considered the king of the moles due to the many and diverse ingredients. The mulatto and pasilla chiles give it it’s deep & complex smoky flavor, while the almonds, plantain, nuts & raisins add a touch of sweetness. All these mole bases require is rehydrating with broth, but it can be doctored with extra touches too.

Ingredients: Mulato chilli, ancho negro chilli, chilhuacle negro chilli, pasilla mexicano chilli, guajillo chilli, plantain, canola oil, peanuts, pure cane sugar, rosemary, sesame seeds, onion, raisins, garlic, sea salt, cocoa beans, cumin, pumpkin seeds, black pepper, walnuts, almonds, cinnamon, dried avocado leaves, thyme, anise, oregano, clove, citric acid. Does not contain artificial colors or flavors.
